Instructions
- Prep the strawberries: In a medium bowl, toss the chopped strawberries with 2 tablespoons granulated sugar and 1 teaspoon cornstarch. Let them sit for 15 minutes.
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch pan.
- Cream the butter and sugar in a separate bowl until light and fluffy, about 3 minutes.
- Add eggs, milk, and vanilla, beating well after each addition.
- Combine the dry ingredients with the wet mixture, mixing just until incorporated.
- Fold in the macerated strawberries and any juices gently into the batter.
- Prepare the cream cheese swirl by beating cream cheese, powdered sugar, 1 egg, and vanilla until smooth.
- Assemble the cake by layering the batter and cream cheese mixture, swirling them slightly.
- Bake for 45–50 minutes, checking doneness with a toothpick.
- Cool on a wire rack for at least 30 minutes before slicing.
