Description

These no-bake bites deliver the best parts of strawberry shortcake in a playful, handheld form, combining creamy cheese, freeze-dried strawberries, and graham cracker crunch.


Ingredients

  • 1 cup Powdered Sugar (can be substituted with coconut sugar)
  • 1 cup Freeze-Dried Strawberries (or fresh, but will alter texture)
  • 1 tsp Vanilla Extract (can use almond extract as a substitute)
  • 1/2 cup Heavy Cream (can use light cream or milk for lower fat)
  • 1 cup Graham Crackers (can use gluten-free crackers)

Instructions

  1. Prepare your dry components: pulse graham crackers in a food processor until they form coarse crumbs; transfer to a bowl. Pulse freeze-dried strawberries into a fine powder; reserve a tablespoon for rolling if desired.
  2. Whip the cream: pour heavy cream into a chilled bowl and whip until soft peaks form.
  3. Beat the cream cheese base: in another bowl, beat room-temperature cream cheese until smooth; add powdered sugar and vanilla, then beat until glossy.
  4. Fold in whipped cream and strawberry powder until uniform.
  5. Add graham crumbs gradually, adjusting the mixture’s consistency.
  6. Scoop mixture and roll into balls; place on a parchment-lined tray.
  7. Firm up in the fridge for at least 1 hour or more for best results.

Notes

For a firmer exterior, briefly roll balls in melted white chocolate before chilling. These can be made up to 3 days in advance. Store in an airtight container.
