Description

A delightful crumb cake featuring layers of fluffy cake and sweet strawberry filling topped with a crunchy crumb topping.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups fresh strawberries (sliced)
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour (for topping)
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (cold)
  • 1 teaspoon cinnamon

Instructions

  1. Prepare the Strawberries: In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Let sit for 15 minutes.
  2. Make the Cake Batter: In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  3. Combine Dry Ingredients: Whisk together flour, baking powder, and salt. Gradually add to the wet mixture, alternating with milk until just combined.
  4. Assemble the Cake: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan. Pour half of the batter into the pan, layer with strawberries, and top with remaining batter.
  5. Prepare the Crumb Topping: In a bowl, combine flour, brown sugar, cinnamon, and cold butter. Mix until crumbly. Sprinkle over the cake batter.
  6. Bake the Cake: Bake for 35-40 minutes until a toothpick inserted comes out clean. Let cool in the pan for 10 minutes.
  7. Serve and Enjoy: Slice the cake and serve warm or at room temperature, optionally with whipped cream or ice cream.

Notes

For a gluten-free version, substitute all-purpose flour with gluten-free flour. Coconut oil can replace butter for a dairy-free option.
