Description
Delicious Strawberry Velvet Cheesecake Truffles, a creamy and rich dessert with a strawberry twist.
Ingredients
Scale
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, pureed (about 4–5 strawberries)
- 1 cup graham cracker crumbs
- 8 ounces white chocolate or chocolate coating
- Optional: additional graham cracker crumbs for garnish
- Optional: chopped strawberries for garnish
Instructions
- Mix Cream Cheese: In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add Sugar and Vanilla: Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Incorporate Strawberry Puree: Fold in the strawberry puree until the mixture is smooth and evenly colored.
- Add Graham Cracker Crumbs: Gently mix in the graham cracker crumbs until fully incorporated.
- Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the cheesecake mixture for about 30 minutes, or until firm enough to handle.
- Shape Truffles: Once chilled, use a small cookie scoop or your hands to form the mixture into bite-sized balls (about 1 inch in diameter). Place them on a baking sheet lined with parchment paper.
- Refrigerate: Place the formed truffles back in the refrigerator for an additional 30 minutes to firm up.
- Melt Chocolate: In a microwave-safe bowl, melt the white chocolate according to package instructions, stirring until smooth.
- Dip Truffles: Using a fork or toothpick, dip each truffle into the melted chocolate, allowing the excess to drip off. Place the coated truffles back on the parchment-lined baking sheet.
- Garnish: If desired, sprinkle additional graham cracker crumbs or chopped strawberries on top of the truffles before the chocolate sets.
- Chill to Set: Refrigerate the truffles for about 30 minutes, or until the chocolate coating is firm.
- Enjoy: Serve chilled and enjoy your delicious Strawberry Velvet Cheesecake Truffles!
