Description

A delicious and hearty classic vegetarian lasagna filled with layers of rich marinara sauce, creamy ricotta, and fresh vegetables.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups marinara sauce
  • 2 cups chopped spinach
  • 1 medium zucchini, sliced
  • 1 medium bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a pan over medium heat; sauté the zucchini and bell pepper until soft.
  4. Add the spinach, oregano, garlic powder, salt, and pepper, and cook until the spinach is wilted.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, followed by half of the ricotta, half of the sautéed vegetables, and one-third of the marinara sauce.
  7. Repeat the layers, finishing with noodles and the remaining marinara sauce on top.
  8. Sprinkle mozzarella and Parmesan cheese on top.
  9. Bake for 30-35 minutes, or until the cheese is bubbly and golden brown.
  10. Let it cool for 10 minutes before slicing and serving.

Notes

For extra flavor, you can add fresh herbs like basil or parsley between the layers.
