A delicious and hearty classic vegetarian lasagna filled with layers of rich marinara sauce, creamy ricotta, and fresh vegetables.

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 cups marinara sauce
- 2 cups chopped spinach
- 1 medium zucchini, sliced
- 1 medium bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- Heat olive oil in a pan over medium heat; sauté the zucchini and bell pepper until soft.
- Add the spinach, oregano, garlic powder, salt, and pepper, and cook until the spinach is wilted.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, followed by half of the ricotta, half of the sautéed vegetables, and one-third of the marinara sauce.
- Repeat the layers, finishing with noodles and the remaining marinara sauce on top.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake for 30-35 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for 10 minutes before slicing and serving.
Notes
For extra flavor, you can add fresh herbs like basil or parsley between the layers.
