These Sweet Apple Crisp Shortbread Bars feature a buttery shortbread crust topped with tender cinnamon apples and a crunchy oat-brown-sugar crumble, making them a perfect cozy dessert.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 cups sliced apples
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/2 cup oats
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup all-purpose flour (for topping)
  • 1/4 cup cold butter, cubed (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.
  2. Cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until creamy and fluffy.
  3. Gradually mix in the flour and salt until just combined.
  4. Press half of this mixture into the bottom of the prepared baking dish to form the crust.
  5. Toss the sliced apples with lemon juice and cinnamon, then spread evenly over the crust.
  6. Mix oats, brown sugar, flour, and cold butter until crumbly, then sprinkle on top of the apples.
  7. Bake for 30–35 minutes until the topping is golden brown and the apples are tender.
  8. Allow the bars to cool in the pan before cutting into squares.

Notes

For best results, use tart apples like Granny Smith. Don’t rush the cooling process to ensure clean cuts.
