Ingredients

  • 1 tablespoon fresh thyme or rosemary, finely chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4-inch rounds and place them on a baking sheet lined with parchment paper.
  3. Drizzle the sweet potato rounds with olive oil and sprinkle with salt, pepper, and cinnamon (if using). Toss the rounds to coat them evenly with the oil and seasonings.
