- 2 medium sweet potatoes, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon ground cinnamon (optional)
- 4 oz goat cheese, crumbled
- 1 tablespoon honey (optional)
- 1 tablespoon fresh thyme or rosemary, finely chopped
- 1 tablespoon balsamic glaze (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4-inch rounds and place them on a baking sheet lined with parchment paper.
- Drizzle the sweet potato rounds with olive oil and sprinkle with salt, pepper, and cinnamon (if using). Toss the rounds to coat them evenly with the oil and seasonings.
- Roast in the preheated oven for 25-30 minutes, flipping the rounds halfway through, until the sweet potatoes are tender and slightly golden around the edges.
- Once the sweet potato rounds are roasted, remove them from the oven and allow them to cool slightly. Then, crumble the goat cheese over the top of each round.
- Drizzle the rounds with honey for a touch of sweetness and sprinkle with fresh thyme or rosemary for an aromatic flavor. Optionally, drizzle with balsamic glaze for a tangy finish.
