  • 3 large eggs
  • 3.2 oz unsalted butter, cubed
  • 1 tbsp fresh lemon juice
  • Pinch of salt
  • 8 fl oz heavy whipping cream, chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Fresh mint leaves for garnish
  • Extra passionfruit pulp for garnish (optional)

Instructions

  1. Preheat your oven to 350°F and prepare your 9-inch tart pan by greasing it lightly.
  2. Layer the phyllo pastry: Lay one sheet of phyllo in the pan and brush it generously with melted butter and sprinkle evenly with granulated sugar. Repeat this with the remaining sheets, rotating slightly.
  3. Trim the edges: Fold or trim the overhanging phyllo to form a neat crust.
  4. Blind bake the crust: Cover the phyllo with parchment paper and fill with pie weights. Bake for 12 minutes, then remove weights and bake for an additional 8 to 10 minutes until golden brown. Allow to cool completely.
  5. Prepare the passionfruit curd: Whisk together the passionfruit pulp, granulated sugar, eggs, lemon juice, and salt in a heatproof bowl over a double boiler, stirring until thickened (about 8 to 10 minutes).
  6. Incorporate the butter: Remove from heat and whisk in cubed butter until smooth. Let cool slightly before pouring into the prepared crust. Refrigerate for at least 2 hours to set.
  7. Whip the cream: When ready to serve, whip the chilled cream with powdered sugar and vanilla until soft peaks form.
  8. Serve with flair: Slice the tart gently and top with whipped cream, fresh mint, and passionfruit pulp if desired.
