  • 1 cup Italian dressing
  • 1 sweet yellow onion, sliced thin
  • 8 oz mushrooms, cleaned and sliced
  • 1 tablespoon olive oil
  • 1 cup Monterey Jack cheese, shredded
  • Salt and pepper, to taste
  • Fresh herbs like thyme or parsley (optional)

Instructions

  1. Marinate the chicken: Place the chicken breasts in a zipper freezer bag. Pour in Italian dressing, seal, and gently massage.
  2. Refrigerate for 30 minutes to 2 hours.
  3. Prep the vegetables: Thinly slice the onion and mushrooms. Shred the cheese and set aside.
  4. Heat the skillet: Warm a heavy skillet over medium-high heat. Add oil and let it shimmer.
  5. Sear the chicken: Remove chicken from the bag, pat dry, season, and sear 4–5 minutes per side.
  6. Sauté the onions and mushrooms: Remove chicken, lower heat, and sauté onions until caramelized. Add mushrooms and cook until browned.
  7. Smother the chicken: Nestle seared chicken back in the skillet, pile vegetables on top, cover, and let cheese melt for 3–5 minutes.
  8. Garnish and serve: Scatter fresh herbs and spoon pan juices over each plate.
