Description

A comforting dish of juicy chicken breasts smothered in sautéed mushrooms, sweet onions, and melted cheese.


Ingredients

  • 4 boneless skinless chicken breasts (about 68 oz each)
  • 2 tablespoons olive oil (or butter)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup sliced mushrooms
  • 1 small onion (thinly sliced)
  • 1 cup shredded mozzarella cheese (or Monterey Jack)
  • ½ cup shredded cheddar cheese
  • 2 tablespoons fresh parsley (chopped for garnish)

Instructions

  1. Pound the chicken breasts to an even thickness of about ½ inch and pat them dry.
  2. In a small bowl, mix paprika, garlic powder, onion powder, salt, and black pepper. Rub this seasoning blend onto both sides of the chicken.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes on each side until golden brown and cooked through, then transfer to a plate and keep warm.
  4. In the same skillet, add the remaining tablespoon of olive oil and sauté the sliced mushrooms and onions for 5–7 minutes until softened and lightly caramelized.
  5. Return the chicken to the skillet and top with the sautéed mushrooms and onions. Sprinkle mozzarella and cheddar cheese over the top, cover, and reduce heat to low for 2–3 minutes until cheese is melted.
  6. Garnish with chopped parsley and serve immediately.

Notes

Feel free to substitute cheeses or vegetables based on your preferences. Use an air fryer for a quicker cooking method. Ensure appropriate cooking times for different chicken cuts.
