Description

A delicious and satisfying breakfast sandwich made with flaky croissants, a creamy egg mixture, crispy beef bacon or sausage, and a variety of toppings.

Ingredients

Scale
  • 4 large croissants
  • 8 large eggs
  • ½ cup milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 tablespoon unsalted butter
  • 8 strips Beef Bacon OR 4 Beef Sausage Patties
  • 4 slices cheese (sharp cheddar, provolone, Swiss)
  • Optional toppings: Fresh spinach leaves, Sliced ripe avocado, Thinly sliced tomato, Hot sauce or sriracha mayo, Pesto or cream cheese

Instructions

  1. Gently slice each croissant in half horizontally. To warm and crisp, place them in a 300°F (150°C) oven for 5 minutes or use a toaster oven for 1-2 minutes.
  2. For beef bacon, preheat oven to 400°F (200°C). Arrange strips on a parchment-lined baking sheet and bake for 20 minutes until crisp, then drain on paper towels. For sausage patties, cook in a non-stick skillet over medium heat for 5 minutes per side until browned and cooked through.
  3. In a bowl, whisk together eggs, milk, salt, and pepper. Melt butter in a large non-stick skillet over medium-low heat. Pour in egg mixture (in batches if needed) and gently fold until mostly set but still moist. Remove from heat immediately.
  4. On the bottom half of each croissant, place a slice of cheese, top with ¼ of the scrambled eggs or 2 fried eggs, then add 2 strips of beef bacon or 1 beef sausage patty. Add optional toppings like spinach, avocado, tomato, or sauces as desired.
  5. Place the top half of the croissant on the sandwich, gently press to combine, and serve immediately for a warm, satisfying breakfast treat.

Notes

  • Feel free to customize with your favorite cheese or toppings.
  • For a vegetarian option, replace beef bacon with additional vegetables or meat substitutes.
  • This sandwich can be made in bulk and refrigerated or frozen for later use.
