Instructions
- In a large bowl, whisk together almond milk, cocoa powder, maple syrup, vanilla extract, and salt until smooth.
- Stir in chia seeds and ensure even dispersion.
- Cover and refrigerate for at least 2 hours, or overnight. Stir once after 30 minutes.
- For the coconut whip, scoop solidified coconut cream into a mixing bowl, discarding excess liquid. Add powdered sugar and vanilla extract, then whip until fluffy.
- Layer the parfaits by spooning chocolate chia pudding followed by coconut whip in your serving glasses.
- Top with berries, shaved chocolate, and toasted coconut flakes.
