Instructions
- Preheat your oven to 350°F.
- Grease and line an 8-inch round cake pan with parchment paper.
- Combine almond milk and apple cider vinegar in a small bowl and let it sit for about 5 minutes.
- In a large mixing bowl, whisk together gluten-free flour, almond flour, hojicha powder, baking powder, baking soda, and salt.
- In a separate bowl, mix curdled almond milk, maple syrup, melted coconut oil, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and stir gently until just combined.
- Transfer the batter to the prepared cake pan and smooth the top.
- Bake for 30 to 35 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the solid part of chilled coconut milk with maple syrup and vanilla extract until fluffy.
- Spread frosting over the cooled cake and dust with hojicha powder and toasted coconut flakes.
- Slice and serve immediately or store for later enjoyment.
