Description
A refreshing and healthy twist on pizza using watermelon as a base topped with yogurt and fresh fruits.
Ingredients
Scale
- 1 large round seedless watermelon (about 2.5 kg)
- 1 cup (240 g) Greek yogurt, plain or vanilla
- 1 tablespoon honey or maple syrup (optional)
- ½ cup (75 g) strawberries, sliced
- ½ cup (75 g) blueberries
- ½ cup (75 g) kiwi, peeled and sliced
- ¼ cup (30 g) raspberries
- 2 tablespoons unsweetened shredded coconut (optional)
- 2 tablespoons chopped fresh mint (optional)
Instructions
- Slice the watermelon crosswise into a 1-inch-thick round slab. Pat dry with paper towels for best yogurt adhesion.
- Place the watermelon round on a large cutting board or platter.
- In a small bowl, mix the Greek yogurt with honey or maple syrup, if using.
- Evenly spread the yogurt over the top of the watermelon, leaving a small border around the edge.
- Arrange the sliced strawberries, blueberries, kiwi, and raspberries over the yogurt, distributing them attractively.
- Sprinkle with shredded coconut and fresh mint, if desired.
- Using a large knife, cut the topped watermelon round into 8 wedges, like pizza slices.
- Serve immediately for best texture and flavor.
Notes
- For best results, serve immediately after preparation.
- Customize the fruits based on personal preference or seasonal availability.
- Consider using a watermelon shaped like a pizza for a fun presentation.
