Description

Indulge in these delightful Banana Pudding Brownies that blend fudgy chocolate brownies with creamy banana pudding, topped with crunchy vanilla wafers.

Ingredients

Scale
  • 1 box brownie mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 3 tablespoons water
  • 1 package instant banana pudding mix (3.4 ounces)
  • 2 cups cold milk
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whipped topping
  • 2 medium bananas, sliced
  • 1 cup vanilla wafer cookies, crushed
  • 1/4 cup melted peanut butter or peanut butter glaze (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine the brownie mix, eggs, vegetable oil, and water. Stir until just combined; it’s okay if a few lumps remain.
  3. Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean and the edges begin to pull away from the sides.
  4. Allow the brownies to cool completely in the pan on a wire rack.
  5. In a medium bowl, whisk the instant banana pudding mix and cold milk together until it begins to thicken—this usually takes just a minute or two.
  6. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  7. Gently fold the pudding mixture into the cream cheese mixture, then fold in the whipped topping until fluffy and well combined.
  8. Spread the banana pudding layer evenly over the cooled brownies, making sure to cover every inch.
  9. Cover the brownies and place them in the fridge to chill for at least 2 hours or until set.
  10. Just before serving, top with sliced bananas, crushed vanilla wafer cookies, and a drizzle of melted peanut butter or peanut butter glaze if desired.
  11. Slice into bars and serve chilled.

Notes

Making these brownies in advance enhances their flavor; they taste even better the next day. Chill to let flavors meld.
