Description

A moist and delightful cake packed with ripe bananas, crunchy walnuts, and creamy white chocolate chips, perfect for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 ripe bananas, mashed
  • 1/2 cup chopped walnuts
  • 1/2 cup white chocolate chips
  • 2 cups creamy custard for filling and topping
  • 1 banana, sliced for garnish
  • 1/4 cup whole or halved walnuts for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare two 8-inch round cake pans by greasing and flouring them to prevent sticking.
  2. Whisk together the flour, baking soda, and salt in a medium mixing bowl.
  3. Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
  4. Add the eggs one at a time, fully incorporating each before the next.
  5. Stir in the vanilla extract.
  6. Mix in the sour cream and mashed bananas until well combined.
  7. Gradually add the dry mixture to the wet, mixing until just combined.
  8. Fold in the chopped walnuts and white chocolate chips gently.
  9. Divide the batter between the two prepared pans.
  10. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  11. Allow the cakes to cool for about 10 minutes before transferring to a wire rack.
  12. Fill and top with creamy custard, garnishing with sliced banana and walnuts.

Notes

Ensure bananas are ripe for optimal sweetness. You can substitute walnuts with pecans or omit them altogether.
