- 3 ripe bananas, mashed
- 1 cup walnut pieces
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the mashed bananas.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, mixing until just combined.
- Fold in the walnut pieces evenly throughout the batter.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely in the pan before transferring to a wire rack.
- Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Slice the cake in half horizontally and spread half of the whipped cream on the bottom layer.
- Place the top layer back on and spread the remaining whipped cream on top.
- Serve and enjoy your cake!
