- 2 large sweet potatoes
- 2 chicken breasts
- 1/2 cup barbecue sauce
- 1 avocado
- 1 cup corn (fresh or frozen)
- Salt and pepper to taste
- Olive oil
- Optional toppings: Fresh cilantro, lime, or shredded cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the sweet potatoes by peeling and dicing them into cubes. Toss with olive oil, salt, and pepper, then spread on a baking sheet.
- Roast in the oven for 25 minutes, flipping halfway through.
- Cook the chicken in a skillet over medium-high heat for 6-7 minutes on each side, brushing with barbecue sauce towards the end.
- Slice the cooked chicken and mix with remaining barbecue sauce.
- Assemble bowls with roasted sweet potatoes, sliced chicken, corn, and avocado.
- Top with optional toppings and serve warm.
Notes
Make-ahead by roasting sweet potatoes and cooking chicken a day prior. Store separately until ready to serve.
