Description

A delightful bowl of grilled chicken, sweet potatoes, and fresh toppings, drizzled with barbecue sauce.


Ingredients

  • 2 large sweet potatoes
  • 2 chicken breasts
  • 1/2 cup barbecue sauce
  • 1 avocado
  • 1 cup corn (fresh or frozen)
  • Salt and pepper to taste
  • Olive oil
  • Optional toppings: Fresh cilantro, lime, or shredded cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and dicing them into cubes. Toss with olive oil, salt, and pepper, then spread on a baking sheet.
  3. Roast in the oven for 25 minutes, flipping halfway through.
  4. Cook the chicken in a skillet over medium-high heat for 6-7 minutes on each side, brushing with barbecue sauce towards the end.
  5. Slice the cooked chicken and mix with remaining barbecue sauce.
  6. Assemble bowls with roasted sweet potatoes, sliced chicken, corn, and avocado.
  7. Top with optional toppings and serve warm.

Notes

Make-ahead by roasting sweet potatoes and cooking chicken a day prior. Store separately until ready to serve.
