Ingredients

  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (168g) unsalted butter, melted
  • 1 1/2 cups (337g) packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups (253g) white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square metal baking pan lightly, then line it with parchment paper for easy removal.
  2. Combine the all-purpose flour, baking powder, and salt in a medium-sized bowl. Set this mixture aside.
  3. Whisk together the melted butter and brown sugar in a large mixing bowl until well blended and smooth, allowing it to cool until it’s just warm to the touch.
  4. Add the eggs and vanilla extract, whisking for about 20-30 seconds until fully incorporated.
  5. Fold the dry ingredients into the wet mixture gently. Be careful not to overmix; then fold in the white chocolate chips until evenly distributed.
  6. Pour the batter into the prepared pan, spreading it evenly into the corners.
  7. Bake for 25-30 minutes, until the edges turn lightly golden but the center still jiggles slightly.
  8. Remove from the oven and allow to cool completely before lifting them out with the parchment paper and cutting them into squares.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free baking mix. Avoid overmixing to keep blondies tender.
