- 3/4 cup (168g) unsalted butter, melted
- 1 1/2 cups (337g) packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups (253g) white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch square metal baking pan lightly, then line it with parchment paper for easy removal.
- Combine the all-purpose flour, baking powder, and salt in a medium-sized bowl. Set this mixture aside.
- Whisk together the melted butter and brown sugar in a large mixing bowl until well blended and smooth, allowing it to cool until it’s just warm to the touch.
- Add the eggs and vanilla extract, whisking for about 20-30 seconds until fully incorporated.
- Fold the dry ingredients into the wet mixture gently. Be careful not to overmix; then fold in the white chocolate chips until evenly distributed.
- Pour the batter into the prepared pan, spreading it evenly into the corners.
- Bake for 25-30 minutes, until the edges turn lightly golden but the center still jiggles slightly.
- Remove from the oven and allow to cool completely before lifting them out with the parchment paper and cutting them into squares.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free baking mix. Avoid overmixing to keep blondies tender.
