Description

A vibrant and luxurious cheesecake featuring tart cherries and crunchy pistachios, set on a buttery graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup pistachios, chopped
  • 1 cup sour cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter in a mixing bowl until cohesive.
  3. Press this mixture into the bottom of a springform pan, forming the crust.
  4. Beat together the cream cheese and sugar in a large mixing bowl until smooth and creamy.
  5. Add the vanilla extract and mix well.
  6. Introduce the eggs, one at a time, fully incorporating each before adding the next.
  7. Fold in the cherries and pistachios gently using a rubber spatula.
  8. Pour the filling over the crust in the springform pan, smoothing the top.
  9. Bake for 50-60 minutes until the center is set but slightly jiggly.
  10. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours.
  11. Mix sour cream and powdered sugar until smooth and spread over the chilled cheesecake before serving.
