- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 (8 ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup fresh cherries, pitted and halved
- 1/2 cup pistachios, chopped
- 1 cup sour cream
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs and melted butter in a mixing bowl until cohesive.
- Press this mixture into the bottom of a springform pan, forming the crust.
- Beat together the cream cheese and sugar in a large mixing bowl until smooth and creamy.
- Add the vanilla extract and mix well.
- Introduce the eggs, one at a time, fully incorporating each before adding the next.
- Fold in the cherries and pistachios gently using a rubber spatula.
- Pour the filling over the crust in the springform pan, smoothing the top.
- Bake for 50-60 minutes until the center is set but slightly jiggly.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours.
- Mix sour cream and powdered sugar until smooth and spread over the chilled cheesecake before serving.
