Description

A delightful dessert that combines the tartness of cranberries with a rich, buttery crumb topping, creating a perfect balance of flavors.

Ingredients

Scale
  • 2 cups fresh or frozen cranberries
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cranberries, sugar, cornstarch, and vanilla extract in a mixing bowl. Mix well and let it marinate for 10 minutes.
  3. Whisk together the flour, oats, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate large bowl.
  4. Mix the melted butter and buttermilk in a small bowl until smooth.
  5. Pour the buttermilk mixture into the dry ingredients and stir gently until just combined.
  6. Grease your baking dish and spread the marinated cranberry mixture evenly across the bottom. Drop spoonfuls of the cobbler batter over the cranberries.
  7. Sprinkle chopped nuts over the top of the batter, if desired.
  8. Bake for 30-35 minutes, or until the top is golden and the cranberries bubble.
  9. Cool for about 10 minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream for a delightful experience. You can prepare the cranberry mixture a day in advance.
