Instructions
- Preheat your oven to 350°F (175°C).
- Combine the cranberries, sugar, cornstarch, and vanilla extract in a mixing bowl. Mix well and let it marinate for 10 minutes.
- Whisk together the flour, oats, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate large bowl.
- Mix the melted butter and buttermilk in a small bowl until smooth.
- Pour the buttermilk mixture into the dry ingredients and stir gently until just combined.
- Grease your baking dish and spread the marinated cranberry mixture evenly across the bottom. Drop spoonfuls of the cobbler batter over the cranberries.
- Sprinkle chopped nuts over the top of the batter, if desired.
- Bake for 30-35 minutes, or until the top is golden and the cranberries bubble.
- Cool for about 10 minutes before serving.
