- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 1 cup honey
- 1 cup sliced almonds
- 1/4 cup unsalted butter (for topping)
- 1/4 cup sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Creaming 1/2 cup softened butter and 1 cup sugar together until light and fluffy.
- Beat in 3 large eggs, one at a time, and add 1 teaspoon vanilla extract.
- Whisk together 2 cups of all-purpose flour and 1 tablespoon baking powder in another bowl. Gradually add this mixture to your creamed mixture alternating with 1 cup of milk.
- Pour the batter into your prepared baking pan, ensuring even spread.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Whip 1/2 cup of heavy cream until soft peaks form, then fold in 1 cup of honey for the filling.
- Melt 1/4 cup of butter in a small pan, stir in 1/4 cup sugar and 1 cup sliced almonds, and cook until caramelized.
- Slice the cooled cake in half horizontally, spread honey-cream filling on the bottom half, and replace the top half.
- Spread the caramelized almond mixture on top of the cake, allowing it to set before slicing to serve.
Notes
Prepare the cake in advance and store in the fridge overnight for improved flavor.
