Instructions
- Cream the butter and sugar in a large mixing bowl until fluffy.
- Add in the egg and vanilla extract, mixing until smooth.
- Mix the dry ingredients in a separate bowl: flour, baking powder, baking soda, and salt.
- Combine wet and dry ingredients, alternating and mixing gently with Greek yogurt.
- Create the rainbow batter by dividing the mixture into bowls and adding food coloring.
- Layer the batter into cupcake liners, alternating colors for a striped effect.
- Bake at 350°F (175°C) for 18-22 minutes until springy.
- Cool completely before frosting with cream cheese frosting.
