Ingredients

  • 500 grams Chicken breast (or boneless thighs)
  • 300 ml Buttermilk (or substitute with ½ cup yogurt mixed with ¼ cup milk)
  • 2 teaspoons Salt (kosher salt preferred)
  • 1 Egg (large)
  • 1 cup Flour (all-purpose)
  • 0.5 cup Cornflour/Cornstarch
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Thyme (fresh)
  • 1 teaspoon Oregano
  • 500 ml Vegetable oil (for frying)

Instructions

  1. Whisk together the buttermilk and egg in a large bowl until fully combined.
  2. Add the chicken pieces to the buttermilk mixture, ensuring every piece is coated. Cover and let marinate for at least 30 minutes.
  3. Mix together the flour, cornflour, salt, garlic powder, onion powder, paprika, cayenne pepper, thyme, and oregano in another bowl.
  4. Heat about 1 inch of vegetable oil in your frying pan over medium heat until it reaches approximately 350°F (180°C).
  5. Dredge each marinated chicken piece in the flour mixture, ensuring it’s coated thoroughly.
  6. Carefully place the coated chicken into the hot oil and fry for about 5-7 minutes on each side until golden brown.
  7. Transfer the chicken to a plate lined with paper towels to absorb excess oil.
  8. Assemble your burger by placing the crispy fried chicken atop a bun and adding your favorite toppings.

Notes

For best results, marinate the chicken overnight for enhanced flavor. Try air frying for a healthier version.
