Light and airy French crullers coated in a sweet glaze, perfect for breakfast or an afternoon treat.

- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 1 teaspoon vanilla extract
- Oil for frying
- 1 cup powdered sugar
- 1–2 tablespoons milk (for glaze)
Instructions
- In a saucepan, bring 1 cup water, 1/2 cup unsalted butter, and 1/4 teaspoon salt to a boil over medium heat.
- Stir in 1 cup all-purpose flour until the mixture forms a smooth ball that pulls away from the sides of the pan.
- Remove the pan from heat and allow the mixture to cool slightly for a few minutes.
- Using an electric mixer, beat in 4 large eggs one at a time, mixing well between each addition until the dough is smooth and glossy.
- Stir in 1 teaspoon vanilla extract, blending thoroughly.
- Heat oil in a deep fryer or large pot to 350°F (175°C). Use a thermometer for accuracy.
- Fill a piping bag fitted with a large round tip with the dough. Carefully pipe rings into the hot oil, delight in their sizzle as they fry.
- Fry the crullers until golden brown on both sides, about 3-4 minutes. Use a slotted spoon to remove them and drain them on paper towels.
- To make the glaze, mix 1 cup powdered sugar with 1-2 tablespoons milk until smooth and desired consistency is reached.
- Dip cooled crullers into the glaze, allowing the excess to drip off before placing them on a rack to set before serving.
Notes
You can prepare the dough a few hours in advance and store it in the refrigerator. For a lighter option, consider using an air fryer.
