- 1 pie crust (homemade or store-bought)
- 4 oz semisweet chocolate, chopped
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs (not pasteurized)
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- Preheat your oven according to your pie crust package instructions. Roll out your crust if making it from scratch, and bake until golden brown. Allow to cool completely.
- Set up your double boiler with water in the bottom pot, and melt the chopped chocolate over heat, stirring until smooth. Let cool slightly.
- Combine the softened butter and granulated sugar in a mixing bowl. Cream together using an electric mixer until light and fluffy, about 3-4 minutes.
- Incorporate the melted chocolate into the butter mixture, beating until combined.
- Add the eggs one at a time, mixing very well after each addition. Stir in the vanilla extract.
- Pour the filling into the cooled pie crust, spreading evenly, and refrigerate for at least 4 hours or until set.
- Whip the heavy cream with the powdered sugar using an electric mixer until stiff peaks form.
- Spread or pipe the whipped cream on top of the pie before serving.
- Slice, serve, and enjoy!
