Description

Delightful protein-packed patties made from sweet potatoes and red lentils, seasoned with cumin and smoked paprika. Perfect for any meal or snack.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Cook the sweet potatoes: In a pot, bring water to a boil. Add the sweet potato cubes and cook until tender, about 15 minutes. Drain and mash until smooth.
  2. Prepare the lentils: In a separate pot, cook the rinsed red lentils with 2 cups of water until tender, approximately 15 minutes. Drain any excess water.
  3. Sauté the aromatics: In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  4. Combine and mix: In a large bowl, blend the mashed sweet potatoes, cooked lentils, sautéed onion and garlic, cumin, smoked paprika, salt, and pepper. Mix until everything is well incorporated.
  5. Form the patties: Using your hands, shape the mixture into patties of your desired size, about 2-3 inches in diameter.
  6. Cook the patties: Heat additional olive oil in the skillet. Carefully place the patties in the hot oil and cook for 4-5 minutes on each side until golden brown and crispy.
  7. Garnish and serve: Remove from the skillet, garnish with fresh parsley, and serve warm. Enjoy the delightful combination of flavors and textures!

Notes

Make-ahead options available; store mixture in the fridge for up to two days before frying. To bake, preheat oven to 400°F (200°C) and cook for 20 minutes.
