Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup Greek yogurt
  • ½ cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup finely chopped pistachios
  • ¼ cup honey for drizzling
  • ¼ cup chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pan.
  2. Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl.
  3. Press the crumb mixture into the bottom of the baking pan and bake for 10 minutes.
  4. Beat the cream cheese in another bowl until smooth.
  5. Add the Greek yogurt, honey, eggs, and vanilla to the cream cheese, mixing until combined.
  6. Fold in the finely chopped pistachios.
  7. Pour the cheesecake filling over the cooled crust and smooth it out.

  9. Cool the cheesecake bars at room temperature, then refrigerate for at least 4 hours before slicing.
