- 4 medium Sweet Potatoes
- 2 cups Cooked Chicken Breast
- 1 cup Fat-Free Cottage Cheese
- 2 cups Frozen Mixed Vegetables
- 1 cup Chicken Broth
- 1 medium Diced Onion
- 1 teaspoon Garlic Powder
- 1 teaspoon Dried Thyme
- 1 tablespoon Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Wash and prick your sweet potatoes with a fork.
- Bake the sweet potatoes on a baking sheet for about 45 minutes, or until tender.
- Combine the cooked chicken breast, cottage cheese, mixed vegetables, chicken broth, onion, garlic powder, thyme, olive oil, salt, and pepper in a large mixing bowl.
- Scoop out a portion of the cooked sweet potato flesh to create a space for the filling.
- Fill the sweet potato halves with the chicken mixture.
- Bake again for an additional 15 minutes.
- Serve and enjoy your comforting meal.
