Comforting stuffed sweet potatoes filled with tender chicken, creamy cottage cheese, and vibrant vegetables for a wholesome meal.


Ingredients

  • 4 medium Sweet Potatoes
  • 2 cups Cooked Chicken Breast
  • 1 cup Fat-Free Cottage Cheese
  • 2 cups Frozen Mixed Vegetables
  • 1 cup Chicken Broth
  • 1 medium Diced Onion
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Thyme
  • 1 tablespoon Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Wash and prick your sweet potatoes with a fork.
  2. Bake the sweet potatoes on a baking sheet for about 45 minutes, or until tender.
  3. Combine the cooked chicken breast, cottage cheese, mixed vegetables, chicken broth, onion, garlic powder, thyme, olive oil, salt, and pepper in a large mixing bowl.
  4. Scoop out a portion of the cooked sweet potato flesh to create a space for the filling.
  5. Fill the sweet potato halves with the chicken mixture.
  6. Bake again for an additional 15 minutes.
  7. Serve and enjoy your comforting meal.
