Description

A comforting bowl of soup that combines all the flavors of traditional lasagna in a warm, soul-nourishing liquid form.


Ingredients

  • 1 lb Ground Meat (beef, turkey, or lentils)
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 28 oz Crushed Tomatoes
  • 1 tbsp Italian Seasoning
  • 4 cups Chicken or Vegetable Broth
  • 8 oz Lasagna Noodles (broken into pieces)
  • 15 oz Ricotta Cheese
  • 2 cups Mozzarella Cheese
  • 1/2 cup Parmesan Cheese (grated)

Instructions

  1. Sauté the Aromatics: In a large pot, add olive oil and sauté onion until translucent. Add garlic and cook for 1 more minute.
  2. Brown the Meat: Add ground meat to the pot, breaking it up, and cook until browned.
  3. Simmer the Base: Stir in crushed tomatoes, Italian seasoning, and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  4. Cook the Noodles: Add broken lasagna noodles to the pot and cook for 8-10 minutes until al dente.
  5. Incorporate the Cheeses: Stir in ricotta and half of the mozzarella.
  6. Finish with a Topping: Ladle soup into bowls and top with remaining mozzarella and Parmesan.
  7. Serve: Garnish with fresh basil or parsley before serving.

Notes

Make-ahead by preparing the soup in advance and adding noodles right before serving. Customize with extra vegetables or spices as desired.
