Description

Ingredients

  • Meat (beef chuck or lamb shank)
  • Root vegetables (carrots and potatoes)
  • Stock or broth (beef, chicken, or vegetable)
  • Seasoning (salt and pepper, fresh herbs)

Instructions

  1. Prepare your meat: Pat your chosen meat dry with paper towels. Season generously with salt and pepper.
  2. Brown the meat: Heat oil in a Dutch oven over medium-high heat. Sear the meat on all sides until golden crust forms.
  3. Add your vegetables: Set the meat aside, add chopped root vegetables to the pot, and sauté until softened.
  4. Combine and simmer: Return the meat to the pot, pour in the stock, season again, bring to a boil, then reduce heat for a simmer.
  5. Slow cook: Cover and cook for 90 minutes to 120 minutes until the meat is fork-tender.
  6. Serve: Let it rest, pull apart the meat, and mix with broth and vegetables.
