Description
A luscious layered cake with creamy custard and vibrant strawberries, perfect for any celebration.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 2 cups vanilla custard (prepared)
- 2 cups fresh strawberries, sliced
- Whipped cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan thoroughly to prevent sticking.
- Cream together the softened butter and sugar until light and fluffy – about 3-4 minutes.
- Add the eggs one at a time, ensuring each is fully incorporated before the next addition.
- Pour in the milk and vanilla extract, stirring gently to combine.
- Mix together the flour and baking powder in a separate bowl. Gradually add this dry mixture to your wet ingredients, folding until just combined; be careful not to overmix.
- Pour the batter into your prepared baking pan, smoothing the top with a spatula. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan. Patience is key; let it cool fully to prevent the custard from melting.
- Once cooled, slice the cake horizontally in half. Spread a generous layer of vanilla custard on the bottom half.
- Layer the sliced strawberries over the custard, distributing them evenly.
- Replace the top half of the cake gently, then add more custard and strawberries on top.
- Serve with a dollop of whipped cream, allowing guests to customize their slices.
Notes
Make the vanilla custard a day in advance and store it in the refrigerator.
