Description

Delicious, guilt-free frozen bites made with Greek yogurt and peanut butter, coated in dark chocolate and topped with crushed peanuts.


Ingredients

  • 2 tablespoons honey or maple syrup

  • ¾ cup dark chocolate chips
  • 1 teaspoon coconut oil
  • Crushed peanuts, mini chocolate chips, shredded coconut, chia seeds (optional toppings)

Instructions

  1. Mix the yogurt base: In a mixing bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Stir with a spatula until fully blended.
  2. Prepare a tray: Line a baking sheet with parchment paper or utilize silicone trays for freezing.
  3. Portion the bites: Using a spoon or an ice cream scoop, drop the yogurt mixture onto the prepared surface.
  4. Freeze: Place the tray in the freezer for about 60 minutes, until firm.
  5. Melt chocolate: In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals until melted.
  6. Coat the bites: Once firm, dip the yogurt bites into melted chocolate or drizzle it on top. Sprinkle toppings while chocolate is wet.
  7. Freeze again: Return bites to the freezer for an additional 30 minutes.
  8. Serve: Remove from the freezer and let sit for a minute before enjoying.
