- 1 cup plain Greek yogurt
- ½ cup natural peanut butter
- 2 tablespoons honey or maple syrup
- ½ teaspoon vanilla extract
- ¾ cup dark chocolate chips
- 1 teaspoon coconut oil
- Crushed peanuts, mini chocolate chips, shredded coconut, chia seeds (optional toppings)
Instructions
- Mix the yogurt base: In a mixing bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Stir with a spatula until fully blended.
- Prepare a tray: Line a baking sheet with parchment paper or utilize silicone trays for freezing.
- Portion the bites: Using a spoon or an ice cream scoop, drop the yogurt mixture onto the prepared surface.
- Freeze: Place the tray in the freezer for about 60 minutes, until firm.
- Melt chocolate: In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals until melted.
- Coat the bites: Once firm, dip the yogurt bites into melted chocolate or drizzle it on top. Sprinkle toppings while chocolate is wet.
- Freeze again: Return bites to the freezer for an additional 30 minutes.
- Serve: Remove from the freezer and let sit for a minute before enjoying.
