- 1 cup Brown Sugar
- 1 cup Unsalted Butter, softened

- 3 cups Powdered Sugar (for filling)
- 2–4 tbsp Milk (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
- Add in the eggs one at a time, mixing thoroughly after each addition.
- Stir in the vanilla extract until well combined.
- Combine the flour, oats, baking powder, baking soda, and salt in another bowl.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Scoop tablespoon-size portions of dough onto the prepared baking sheets, leaving space for spreading.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool on baking sheets for a few minutes before transferring to a wire rack.
- Beat together the softened butter, powdered sugar, vanilla extract, and enough milk to achieve a smooth filling.
- Spread a generous dollop of filling on the bottom of one cookie and top with another to create a sandwich.
Notes
For a gluten-free option, substitute regular flour with a gluten-free blend. Baking in an air fryer is also a quick alternative.
