Description

Ingredients

  • 1 cup All-Purpose Flour
  • 1 cup Brown Sugar
  • 1 cup Unsalted Butter, softened
  • 2 Eggs

  • Pinch of Salt
  • 3 cups Powdered Sugar (for filling)
  • 24 tbsp Milk (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
  3. Add in the eggs one at a time, mixing thoroughly after each addition.
  4. Stir in the vanilla extract until well combined.
  5. Combine the flour, oats, baking powder, baking soda, and salt in another bowl.
  6. Gradually mix the dry ingredients into the wet mixture until just combined.
  7. Scoop tablespoon-size portions of dough onto the prepared baking sheets, leaving space for spreading.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Let the cookies cool on baking sheets for a few minutes before transferring to a wire rack.
  10. Beat together the softened butter, powdered sugar, vanilla extract, and enough milk to achieve a smooth filling.
  11. Spread a generous dollop of filling on the bottom of one cookie and top with another to create a sandwich.

Notes

For a gluten-free option, substitute regular flour with a gluten-free blend. Baking in an air fryer is also a quick alternative.
