Description

A colorful and flavorful dish featuring tender, marinated chicken glazed in honey and Sriracha, served with jasmine rice and a creamy lime sauce.


Ingredients

  • 1 lb chicken breast, diced
  • 1/4 cup honey
  • 2 tbsp sriracha
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 cup jasmine rice
  • 2 cups water
  • 1 avocado, sliced
  • 1 cup corn (canned or frozen)
  • 1 red bell pepper, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup sour cream
  • 1 lime, juiced
  • Salt and pepper (to taste)

Instructions

  1. Combine honey, Sriracha, soy sauce, and olive oil in a large bowl.
  2. Add the diced chicken, ensuring it is well-coated.
  3. Let it marinate for at least 30 minutes in the refrigerator.
  4. Rinse jasmine rice under cold water until the water runs clear.
  5. Combine the rinsed rice and water in a pot.
  6. Bring to a boil, then reduce to a simmer and cover, cooking for 15-20 minutes.
  7. Heat a skillet over medium-high heat.
  8. Add the marinated chicken in batches, sautéing for 6-8 minutes.
  9. Mix sour cream and lime juice in a small bowl, adjusting with salt and pepper.
  10. Start with a scoop of rice in a bowl, layering cooked chicken, avocado, corn, and bell pepper.
  11. Drizzle with creamy lime sauce and garnish with cilantro.

Notes

For a spicy kick, adjust the amount of Sriracha. You can also marinate the chicken overnight for deeper flavors.
