- 2 tbsp sriracha
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 cup jasmine rice
- 2 cups water
- 1 avocado, sliced
- 1 cup corn (canned or frozen)
- 1 red bell pepper, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup sour cream
- 1 lime, juiced
- Salt and pepper (to taste)
Instructions
- Combine honey, Sriracha, soy sauce, and olive oil in a large bowl.
- Add the diced chicken, ensuring it is well-coated.
- Let it marinate for at least 30 minutes in the refrigerator.
- Rinse jasmine rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a pot.
- Bring to a boil, then reduce to a simmer and cover, cooking for 15-20 minutes.
- Heat a skillet over medium-high heat.
- Add the marinated chicken in batches, sautéing for 6-8 minutes.
- Mix sour cream and lime juice in a small bowl, adjusting with salt and pepper.
- Start with a scoop of rice in a bowl, layering cooked chicken, avocado, corn, and bell pepper.
- Drizzle with creamy lime sauce and garnish with cilantro.
Notes
For a spicy kick, adjust the amount of Sriracha. You can also marinate the chicken overnight for deeper flavors.
