Description

A delightful dish combining roasted sweet potatoes with spicy ground beef, topped with colorful garnishes for a satisfying meal.


Ingredients

  • 4 medium sweet potatoes
  • 1 pound lean ground beef (85–90%)
  • 1/4 cup hot honey (divided)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1/2 cup crumbled feta or goat cheese (optional)
  • 2 green onions, sliced
  • 1 tablespoon lime juice
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the sweet potatoes by slicing them lengthwise, scoring the flesh, brushing with 1 tablespoon of olive oil, and seasoning with salt and pepper.
  3. Roast the potatoes cut-side down on the baking sheet for 30-40 minutes until fork-tender.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  5. Add minced garlic and cook for an additional 30 seconds.
  6. Toss the ground beef into the skillet and cook for 6-8 minutes until browned, draining excess grease if needed.
  7. Stir in smoked paprika, cumin, chili flakes, salt, and pepper, cooking for another minute.
  8. Mix in 2 tablespoons of hot honey, simmering for 2-3 minutes until thickened.
  9. Scoop a small amount of flesh from the roasted sweet potatoes and fill them with the beef mixture.
  10. Return the filled potatoes to the oven for 5-7 minutes to warm through.
  11. Top with remaining hot honey, feta or goat cheese, herbs, green onions, lime juice, and avocado slices.
  12. Serve after allowing the boats to rest for 5 minutes.
