- 4 medium sweet potatoes
- 1 pound lean ground beef (85–90%)
- 1/4 cup hot honey (divided)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili flakes
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil (divided)
- 2 tablespoons fresh parsley or cilantro, chopped
- 1/2 cup crumbled feta or goat cheese (optional)
- 2 green onions, sliced
- 1 tablespoon lime juice
- 1 avocado, sliced (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the sweet potatoes by slicing them lengthwise, scoring the flesh, brushing with 1 tablespoon of olive oil, and seasoning with salt and pepper.
- Roast the potatoes cut-side down on the baking sheet for 30-40 minutes until fork-tender.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and cook for an additional 30 seconds.
- Toss the ground beef into the skillet and cook for 6-8 minutes until browned, draining excess grease if needed.
- Stir in smoked paprika, cumin, chili flakes, salt, and pepper, cooking for another minute.
- Mix in 2 tablespoons of hot honey, simmering for 2-3 minutes until thickened.
- Scoop a small amount of flesh from the roasted sweet potatoes and fill them with the beef mixture.
- Return the filled potatoes to the oven for 5-7 minutes to warm through.
- Top with remaining hot honey, feta or goat cheese, herbs, green onions, lime juice, and avocado slices.
- Serve after allowing the boats to rest for 5 minutes.
