A luscious Southern classic cake infused with ripe bananas, crushed pineapple, and crunchy pecans, frosted with creamy cream cheese frosting.

- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 tsp baking soda

- 1 cup vegetable oil

- 1 1/2 cups mashed ripe bananas (about 3–4)
- 1 cup crushed pineapple (lightly drained)
- 1 cup chopped pecans
- 300 g cream cheese
- 1/2 cup powdered sugar
- 1 tsp vanilla (for filling)
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar (for whipped cream)
- 1/2 cup butter (softened)
- Additional chopped pecans (for garnish)
Instructions
- Preheat your oven to 175°C (350°F) and grease and line three 8-inch round cake pans.
- Whisk together the flour, sugar, baking soda, salt, and cinnamon until well combined.
- Add the eggs, oil, and vanilla extract into the dry mix. Stir until just combined.
- Gently fold in the mashed bananas, crushed pineapple, and chopped pecans.
- Divide the batter evenly between your prepared pans.
- Bake for 25–30 minutes, until lightly golden and a toothpick inserted comes out clean.
- Allow the cakes to cool in their pans for 10–15 minutes, then transfer to a wire rack to cool completely.
- Beat the cream cheese, powdered sugar, and vanilla for the filling until smooth and fluffy.
- Whip the heavy cream with 2 tablespoons powdered sugar until soft-medium peaks form.
- Beat the cream cheese and softened butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
- Assemble the cake with layers of cream cheese filling and whipped cream between each layer, then frost the entire cake with the cream cheese frosting.
- Chill for 30–60 minutes before slicing.

Make-ahead tips: You can bake the cake layers a day in advance. Customize with different nuts or add shredded coconut for extra flavor.
