Description

A luscious Southern classic cake infused with ripe bananas, crushed pineapple, and crunchy pecans, frosted with creamy cream cheese frosting.


Ingredients

  • 2 cups granulated sugar
  • 1 tsp baking soda

  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3–4)
  • 1 cup crushed pineapple (lightly drained)
  • 1 cup chopped pecans
  • 300 g cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla (for filling)
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar (for whipped cream)
  • 1/2 cup butter (softened)
  • Additional chopped pecans (for garnish)

Instructions

  1. Preheat your oven to 175°C (350°F) and grease and line three 8-inch round cake pans.
  2. Whisk together the flour, sugar, baking soda, salt, and cinnamon until well combined.
  3. Add the eggs, oil, and vanilla extract into the dry mix. Stir until just combined.
  4. Gently fold in the mashed bananas, crushed pineapple, and chopped pecans.
  5. Divide the batter evenly between your prepared pans.
  6. Bake for 25–30 minutes, until lightly golden and a toothpick inserted comes out clean.
  7. Allow the cakes to cool in their pans for 10–15 minutes, then transfer to a wire rack to cool completely.
  8. Beat the cream cheese, powdered sugar, and vanilla for the filling until smooth and fluffy.
  9. Whip the heavy cream with 2 tablespoons powdered sugar until soft-medium peaks form.
  10. Beat the cream cheese and softened butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
  11. Assemble the cake with layers of cream cheese filling and whipped cream between each layer, then frost the entire cake with the cream cheese frosting.
  12. Chill for 30–60 minutes before slicing.

Notes

Make-ahead tips: You can bake the cake layers a day in advance. Customize with different nuts or add shredded coconut for extra flavor.
