Instructions
- Preheat your oven to 325°F (163°C).
- Mix the crushed graham crackers, melted butter, and brown sugar until well combined.
- Press the mixture firmly into the bottom of a springform pan, creating an even layer. Bake for 10 minutes, then allow to cool.
- Combine the softened cream cheese and granulated sugar in a large mixing bowl. Use an electric mixer on medium speed until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Then stir in the sour cream, vanilla extract, flour, and cinnamon until fully incorporated.
- Pour the cheesecake batter over the cooled crust, smoothing out the top. Bake for 50-60 minutes, until the edges are set, but the center still slightly jiggles. Turn off the oven, crack the door open, and let the cheesecake cool inside for an hour.
- Prepare the peach topping: In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced peaches, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5-7 minutes until the peaches soften and caramelize. Set aside to cool.
- Beat 4 oz cream cheese with powdered sugar, cinnamon, vanilla extract, and milk until smooth for the glaze. Drizzle over the cooled cheesecake.
- Top with the caramelized peaches and chill in the refrigerator for at least 4 hours (or overnight) before serving.
