  • 4 oz cream cheese
  • 0.5 cups powdered sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix the crushed graham crackers, melted butter, and brown sugar until well combined.
  3. Press the mixture firmly into the bottom of a springform pan, creating an even layer. Bake for 10 minutes, then allow to cool.
  4. Combine the softened cream cheese and granulated sugar in a large mixing bowl. Use an electric mixer on medium speed until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Then stir in the sour cream, vanilla extract, flour, and cinnamon until fully incorporated.
  6. Pour the cheesecake batter over the cooled crust, smoothing out the top. Bake for 50-60 minutes, until the edges are set, but the center still slightly jiggles. Turn off the oven, crack the door open, and let the cheesecake cool inside for an hour.
  7. Prepare the peach topping: In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced peaches, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5-7 minutes until the peaches soften and caramelize. Set aside to cool.
  8. Beat 4 oz cream cheese with powdered sugar, cinnamon, vanilla extract, and milk until smooth for the glaze. Drizzle over the cooled cheesecake.
  9. Top with the caramelized peaches and chill in the refrigerator for at least 4 hours (or overnight) before serving.

Notes
