- 16 ounces Cream Cheese
- 1 cup Granulated Sugar
- 2 tablespoons Lemon Juice
- 1 teaspoon Vanilla Extract
- 1 cup Sour Cream
- 3 large Eggs
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Prepare the blueberry sauce by whisking together 1 cup of granulated sugar and 1 tablespoon of cornstarch in a medium saucepan.
- Add 2 cups of fresh blueberries and 2 tablespoons of lemon juice, stirring gently.
- Cook over medium heat for about 5 minutes until thickened and allow to cool.
- Make the crust by pulsing 9 sheets of graham crackers and 1/4 cup of light brown sugar in a food processor until crumbled.
- Add 1/2 cup of melted unsalted butter, pulsing until resembling wet sand.
- Press the mixture firmly into the bottom of the prepared pan and bake for 10 minutes until lightly golden. Lower the oven temperature to 325°F (160°C).
- Prepare the cheesecake filling by beating together 16 ounces of cream cheese, 1 cup of granulated sugar, 2 tablespoons of lemon juice, and 1 teaspoon of vanilla extract until creamy.
- Gradually incorporate 1 cup of sour cream.
- Add eggs one at a time, mixing slowly until just combined.
- Pour the cheesecake filling over the baked crust and spread evenly.
- Spoon the cooled blueberry sauce over the filling and use a knife to gently swirl it for a marbled effect.
- Bake for 35-40 minutes until the edges puff slightly and the center jiggles gently.
- Cool the pan completely at room temperature, then refrigerate for at least 4 hours before slicing.
