Description

Delicious cheesecake bars featuring a creamy filling and a burst of fresh blueberries, perfect for any gathering.


Ingredients

  • 1 cup Granulated Sugar
  • 1 tablespoon Cornstarch
  • 2 cups Fresh Blueberries
  • 2 tablespoons Lemon Juice
  • 9 sheets Graham Crackers
  • 1/4 cup Light Brown Sugar
  • 1/2 cup Unsalted Butter
  • 16 ounces Cream Cheese
  • 1 cup Granulated Sugar
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1 cup Sour Cream
  • 3 large Eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Prepare the blueberry sauce by whisking together 1 cup of granulated sugar and 1 tablespoon of cornstarch in a medium saucepan.
  3. Add 2 cups of fresh blueberries and 2 tablespoons of lemon juice, stirring gently.
  4. Cook over medium heat for about 5 minutes until thickened and allow to cool.
  5. Make the crust by pulsing 9 sheets of graham crackers and 1/4 cup of light brown sugar in a food processor until crumbled.
  6. Add 1/2 cup of melted unsalted butter, pulsing until resembling wet sand.
  7. Press the mixture firmly into the bottom of the prepared pan and bake for 10 minutes until lightly golden. Lower the oven temperature to 325°F (160°C).
  8. Prepare the cheesecake filling by beating together 16 ounces of cream cheese, 1 cup of granulated sugar, 2 tablespoons of lemon juice, and 1 teaspoon of vanilla extract until creamy.
  9. Gradually incorporate 1 cup of sour cream.
  10. Add eggs one at a time, mixing slowly until just combined.
  11. Pour the cheesecake filling over the baked crust and spread evenly.
  12. Spoon the cooled blueberry sauce over the filling and use a knife to gently swirl it for a marbled effect.
  13. Bake for 35-40 minutes until the edges puff slightly and the center jiggles gently.
  14. Cool the pan completely at room temperature, then refrigerate for at least 4 hours before slicing.

Notes

Prepare a day in advance for enhanced flavor. Can be made gluten-free by substituting graham crackers.
