- 9 graham crackers, crushed
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sour cream
- 3/4 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup honey
- 1 cup pistachios, chopped
- 1 teaspoon cinnamon
- 1/2 cup phyllo dough, chopped (optional for topping)
- Additional honey for drizzling
Instructions
- Preheat the oven to 325°F (160°C).
- Prepare the crust by mixing crushed graham crackers and melted butter, then pressing firmly into the bottom of a springform pan.
- Mix the filling by beating the cream cheese until smooth and creamy, then adding sour cream, sugar, eggs, and vanilla extract until well combined.
- Incorporate honey, chopped pistachios, and cinnamon gently into the filling.
- Pour the filling into the prepared crust and spread evenly.
- Bake for 50-60 minutes or until edges are set with a slight jiggle in the center.
- Cool completely at room temperature, then refrigerate for at least 4 hours (overnight preferred).
- Serve with optional chopped phyllo and drizzle additional honey before slicing.
Notes
Make-ahead: This cheesecake can be made a day or two in advance for better flavor. Avoid overmixing the batter to prevent cracks.
