Description

Delightful Raspberry Cream Cheese Cruffins with flaky layers and a creamy raspberry filling, perfect for any occasion.

Ingredients

Scale
  • 4 cups All-purpose flour
  • 2 teaspoons Active dry yeast
  • 1/4 cup Granulated sugar
  • 1 teaspoon Salt
  • 1 cup Whole milk
  • 1/2 cup Unsalted butter, melted
  • 2 cups Fresh raspberries
  • 8 ounces Cream cheese
  • 1 cup Powdered sugar

Instructions

  1. Activate the yeast: In a small bowl, combine the lukewarm milk and sugar, then sprinkle the yeast on top. Let it sit for about 10 minutes until frothy.
  2. Prepare the dough: In a large mixing bowl, whisk together the flour and salt. Create a well in the center, then pour in the yeast mixture and melted butter. Stir until a shaggy dough forms.
  3. Knead: Transfer the dough onto a floured surface and knead for about 8-10 minutes, until the dough becomes smooth and elastic.
  4. First rise: Place the dough in a greased bowl, cover it with a damp towel, and let it rise in a warm environment until doubled in size, roughly 60 minutes.
  5. Shape: Once the dough has risen, punch it down and roll it out on a floured surface to create a rectangle about 1/4 inch thick.
  6. Prepare the filling: In a bowl, mix cream cheese and powdered sugar until smooth. Spread this mixture over the dough, leaving a small border around the edges. Sprinkle the fresh raspberries evenly over the cream cheese layer.
  7. Roll and cut: Starting from one long side, roll the dough tightly into a log. Slice the log into 12 equal pieces.
  8. Second rise: Arrange the slices in a greased muffin tin. Cover again and let rise for about 30 minutes while preheating your oven to 375°F (190°C).
  9. Bake: Bake for 18-20 minutes until golden brown and puffed. Allow to cool slightly before savoring these beauties!

Notes

Make-ahead tips: Prep the dough the night before, then refrigerate it after kneading. The next morning, let it warm up before rolling it out.
