- 1/2 cup active sourdough starter
- 4 cups all-purpose flour
- 1 1/2 cups water
- 2 teaspoons salt
- 2 tablespoons olive oil
- 1/4 cup marinara or pesto sauce
- 8 ounces mozzarella cheese
- Favorite toppings (veggies, meats, or herbs)
- 1 tablespoon olive oil (for brushing)
Instructions
- Mix the Dough: In a large mixing bowl, combine your active sourdough starter, flour, water, salt, and olive oil. Stir together until a cohesive dough forms.
- Knead the Dough: Transfer the dough onto a floured surface and knead for 8-10 minutes until it becomes smooth and elastic.
- Let it Rise: Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm spot for 1-2 hours until it doubles in size.
- Prepare the Dough: Once risen, punch down the dough and roll it out on a floured surface to about ¼ inch thickness. Cut into 6-8 inch circles.
- Fill Each Circle: On one half of each dough circle, spread a tablespoon of sauce, followed by mozzarella and your chosen toppings.
- Seal the Calzones: Fold the other half over the filling to create a semi-circle. Seal and crimp edges.
- Brush and Bake: Place on a baking sheet lined with parchment paper. Brush tops with olive oil and bake at 400°F (200°C) for 20-25 minutes.
- Enjoy: Let the calzones cool for a few minutes before serving.

For make-ahead tips, prepare the dough up to three days in advance. Use the air fryer for a quicker cook time.
