Description

Moist and tender carrot cake bars swirled with a luscious cream cheese mixture, perfect for any occasion.


Ingredients

  • 1 cup light brown sugar
  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter (softened)
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking pan.
  2. Mix the dry ingredients in a bowl: flour, baking powder, cinnamon, nutmeg, and salt.
  3. Beat together the softened butter and light brown sugar until light and fluffy, about 3-4 minutes.
  4. Incorporate the egg into the butter mixture until fully combined.
  5. Blend in the grated carrots until evenly distributed.
  6. Combine the wet and dry mixtures, folding gently to avoid overmixing.
  7. Prepare the cream cheese mixture by mixing softened cream cheese, granulated sugar, and egg yolk until smooth.
  8. Layer the mixtures in the baking pan, starting with half the carrot cake batter, followed by the cream cheese mixture, then the remaining batter.
  9. Bake for 28-30 minutes, until the center sets slightly.
  10. Cool completely in the pan before slicing.
