- 0.5 cup unsalted butter (softened)
- 1 cup freshly grated carrots
- 4 ounces cream cheese (softened)
- 1 large egg yolk
- 0.5 cup granulated sugar
Instructions
- Preheat the oven to 350°F (175°C) and prepare your baking pan.
- Mix the dry ingredients in a bowl: flour, baking powder, cinnamon, nutmeg, and salt.
- Beat together the softened butter and light brown sugar until light and fluffy, about 3-4 minutes.
- Incorporate the egg into the butter mixture until fully combined.
- Blend in the grated carrots until evenly distributed.
- Combine the wet and dry mixtures, folding gently to avoid overmixing.
- Prepare the cream cheese mixture by mixing softened cream cheese, granulated sugar, and egg yolk until smooth.
- Layer the mixtures in the baking pan, starting with half the carrot cake batter, followed by the cream cheese mixture, then the remaining batter.
- Bake for 28-30 minutes, until the center sets slightly.
- Cool completely in the pan before slicing.
