Ingredients

  • 1 cup almond flour
  • 1/4 cup unsalted butter
  • 1/4 cup erythritol or other sweetener
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sugar-free caramel sauce
  • 1/2 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the almond flour, unsalted butter, erythritol, and vanilla extract in a mixing bowl until a dough forms.
  3. Form the dough into the bottom of a lined baking dish, spreading it evenly.
  4. Bake for 12–15 minutes until golden brown. Let it cool completely.
  5. Layer the sugar-free caramel sauce over the shortbread crust.
  6. Melt the chocolate chips with coconut oil until smooth.
  7. Top the caramel layer with melted chocolate, spreading it evenly.
  8. Set in the refrigerator until the chocolate hardens, about 1–2 hours.
  9. Slice into squares and serve.

Notes

For a nut-free option, substitute almond flour with sunflower seed flour. These bars can be stored in the fridge for up to a week.
