- 1 cup almond flour
- 1/4 cup unsalted butter
- 1/4 cup erythritol or other sweetener
- 1/2 teaspoon vanilla extract
- 1/2 cup sugar-free caramel sauce
- 1/2 cup sugar-free chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the almond flour, unsalted butter, erythritol, and vanilla extract in a mixing bowl until a dough forms.
- Form the dough into the bottom of a lined baking dish, spreading it evenly.
- Bake for 12–15 minutes until golden brown. Let it cool completely.
- Layer the sugar-free caramel sauce over the shortbread crust.
- Melt the chocolate chips with coconut oil until smooth.
- Top the caramel layer with melted chocolate, spreading it evenly.
- Set in the refrigerator until the chocolate hardens, about 1–2 hours.
- Slice into squares and serve.
Notes
For a nut-free option, substitute almond flour with sunflower seed flour. These bars can be stored in the fridge for up to a week.
