Ingredients

  • 1/4 cup coconut flour
  • 1/3 cup erythritol
  • 1/4 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 egg

Instructions

  2. Combine almond flour, coconut flour, erythritol, and salt in a mixing bowl.
  3. Cream the softened butter and erythritol together until light and fluffy.
  4. Add the vanilla extract and the egg, mixing until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until a cohesive dough forms.
  6. Roll the dough into small balls, flattening them slightly on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges turn golden brown.
  8. Allow the wafers to cool before transferring to a wire rack.
