- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 3 large egg yolks
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup key lime juice
- 1 tablespoon key lime zest
- 1/4 teaspoon salt
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven: Set your oven to 350°F (175°C).
- Make the crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press this mixture into a 9-inch pie pan.
- Bake the crust: Place the crust in the oven for 8-10 minutes until light golden brown. Remove and let cool.
- Prepare the filling: In a large bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, lime zest, and salt until smooth.
- Combine and bake again: Pour the filling into the cooled crust and bake for 10-12 minutes until set but jiggly in the center.
- Cool the pie: Allow the pie to cool at room temperature, then refrigerate for at least 3 hours.
- Prepare the whipped cream: In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
- Top and garnish: Spread the whipped cream on the chilled pie. Garnish with lime slices or zest if desired.
Notes
Key Lime Pie can be prepared a day in advance for better flavor. Store covered in the refrigerator for up to 4 days.
