Description

A delightful culinary experience featuring crispy chicken coated with lemon zest and savory Romano cheese, perfect for any occasion.

Ingredients

Scale
  • 4 pieces boneless, skinless chicken breasts (or chicken thighs)
  • Salt and pepper, to taste
  • 1 cup all-purpose flour (whole wheat flour is a fine alternative)
  • 2 large eggs (or a vegan flax egg)
  • 1 cup grated Romano cheese (Parmesan is a good substitute)
  • 1 tablespoon lemon zest (fresh is best for robust flavor)
  • 1/4 cup fresh lemon juice (fresh juice is always the way to go)
  • 1/2 cup chicken broth (vegetable broth works too)
  • 1/4 cup dry white wine (substituting more chicken broth is a good option)
  • 2 tablespoons olive oil (feel free to swap with vegetable oil)
  • 1/4 cup fresh parsley (or any preferred fresh herbs)
  • 2 slices lemon (for presentation and an extra pop of flavor)

Instructions

  1. Begin by tenderizing your chicken breasts gently with a meat tenderizer or rolling pin, ensuring even thickness.
  2. Season the chicken liberally with salt and pepper on both sides.
  3. Set up a dredging station: one bowl with flour, another with beaten eggs, and a third with a mixture of Romano cheese, lemon zest, and a bit more salt and pepper.
  4. Coat each piece of chicken in flour, dip it in eggs, and finally, press it into the cheesy mixture, ensuring each piece is thoroughly covered.
  5. Heat olive oil in a skillet over medium-high heat until shimmering.
  6. Carefully add the chicken to the pan, avoiding overcrowding, and cook for about 4-5 minutes on each side until golden brown and cooked through.
  7. Remove chicken from the pan and set it aside. Add lemon juice, broth, and white wine to deglaze, scraping flavorful bits from the bottom.
  8. Simmer the sauce for a few minutes, then return the chicken to the skillet to soak in the flavors for about 1-2 minutes.
  9. Finish with a sprinkle of fresh parsley and serve with a slice of lemon.

Notes

Make-ahead tip: Prep chicken and breading a day in advance. For a healthier option, bake at 400°F (200°C) for 25-30 minutes.
