- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 2 large egg whites
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the flour and powdered sugar in a mixing bowl.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- Press the mixture firmly into the bottom of an 8×8-inch baking dish to create a solid crust.
- Bake for 15-20 minutes or until lightly golden brown.
- Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and salt in another bowl until well blended.
- Pour the lemon mixture over the baked crust and return it to the oven.
- Bake for an additional 20 minutes.
- Whip the egg whites and cream of tartar in a separate bowl until soft peaks form.
- Gradually add in the sugar and continue to whip until the meringue reaches stiff peaks.
- Spread the meringue evenly over the hot lemon filling.
- Bake for an additional 10 minutes until lightly browned.
- Allow to cool completely before slicing into bars.
Notes
Prepare the crust a day in advance and store it at room temperature. Ensure meringue is not overwhipped for best results.
