Description

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the flour and powdered sugar in a mixing bowl.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. Press the mixture firmly into the bottom of an 8×8-inch baking dish to create a solid crust.
  5. Bake for 15-20 minutes or until lightly golden brown.
  6. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and salt in another bowl until well blended.
  7. Pour the lemon mixture over the baked crust and return it to the oven.
  8. Bake for an additional 20 minutes.
  9. Whip the egg whites and cream of tartar in a separate bowl until soft peaks form.
  10. Gradually add in the sugar and continue to whip until the meringue reaches stiff peaks.
  11. Spread the meringue evenly over the hot lemon filling.
  12. Bake for an additional 10 minutes until lightly browned.
  13. Allow to cool completely before slicing into bars.

Prepare the crust a day in advance and store it at room temperature. Ensure meringue is not overwhipped for best results.
