Instructions

  1. Heat the oil: In a large skillet, warm up the olive oil over medium-high heat.
  2. Cook the beef: Add the ground beef to the skillet, breaking it apart as it cooks for about 5–7 minutes until browned.
  3. Drain any excess fat to keep your stir fry light and healthy.
  4. Add aromatics: Toss in the sliced onion and minced garlic; stir for 2–3 minutes until the onions soften.
  5. Sauté the veggies: Add the red bell pepper and zucchini, cooking for 4–5 minutes until tender yet crisp.
  6. Incorporate tomatoes and spices: Fold in cherry tomatoes, dried oregano, paprika, salt, and pepper; cook for an additional 3–4 minutes.
  7. Finish and serve: Remove from heat, garnish with parsley and crumbled feta if desired, and serve warm.
