Instructions
- Heat the oil: In a large skillet, warm up the olive oil over medium-high heat.
- Cook the beef: Add the ground beef to the skillet, breaking it apart as it cooks for about 5–7 minutes until browned.
- Drain any excess fat to keep your stir fry light and healthy.
- Add aromatics: Toss in the sliced onion and minced garlic; stir for 2–3 minutes until the onions soften.
- Sauté the veggies: Add the red bell pepper and zucchini, cooking for 4–5 minutes until tender yet crisp.
- Incorporate tomatoes and spices: Fold in cherry tomatoes, dried oregano, paprika, salt, and pepper; cook for an additional 3–4 minutes.
- Finish and serve: Remove from heat, garnish with parsley and crumbled feta if desired, and serve warm.
Notes
