Description

Delight in the vibrant flavors of Mediterranean Quesadillas filled with spinach, feta, and mozzarella for a mouthwatering experience.

Ingredients

Scale
  • 4 large tortillas (flour or whole wheat)
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh herbs (such as basil and oregano)
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Heat your skillet over medium heat and add a drizzle of olive oil.
  2. Place one tortilla flat in the skillet.
  3. Layer half of the fresh spinach on one half of the tortilla, then sprinkle with feta, mozzarella, and herbs.
  4. Fold the tortilla over the filling and cook until golden brown, about 2-3 minutes.
  5. Flip the quesadilla and cook the other side for another 2-3 minutes.
  6. Cut the quesadilla into wedges using a sharp knife.
  7. Serve warm with your favorite dipping sauce.

Notes

You can make these quesadillas vegan by using plant-based cheeses and tofu feta. To avoid sogginess, ensure fillings are dry.
