- 2 cups fresh spinach

Instructions
- Heat your skillet over medium heat and add a drizzle of olive oil.
- Place one tortilla flat in the skillet.
- Layer half of the fresh spinach on one half of the tortilla, then sprinkle with feta, mozzarella, and herbs.
- Fold the tortilla over the filling and cook until golden brown, about 2-3 minutes.
- Flip the quesadilla and cook the other side for another 2-3 minutes.
